Chicken Marsala

    I'm getting pretty good at this Italian cooking thing, if I do say so myself. Turned out pretty good, for chicken. Nice golden brown color and very flavorful. .

    Chicken Marsala I cooked the other evening.

    Where did you get the recipe? Looks pretty good. Might be the camera but it looks a little lighter than what I am used to? I haven't had it since I left NY and I miss it. Hope you had some freshly grated parm to go with it! :D

    It's one I've had for a while. I think I just found it on the web and was probably a hybrid of several similar recipes.

    Chicken Tenders pounded thin (Breasts or thighs would have worked, just happened to have tenders)
    Dredge in flour seasoned with salt/pepper/oregano
    Brown in olive oil 8 minutes on one side
    Turn
    Add mushrooms
    Add 1/4 c dry Sherry and 1/2 c of Marsala
    Cover, reduce heat, cook for another 8 min.

    I added a couple of pats of butter at the end and chopped parsley.
