So when this miniature potato cannon is fired, the only thing stopping the bolt from coming back is the tiny point of contact where the bolt handle (1/4" bolt shaft) engages a narrow slot on the side of the PVC tubing?

Okay, but before I'd make a full-sized potato cannon with a 2" bore, I would design a bolt that has multiple locking lugs. Or a different style of action, maybe a falling block design. Or maybe something that comes up from the bottom and blocks the bolt from moving rearward by filling the space between the back of the bolt and the end of the receiver with a wide plug. Pulling a lever or squeezing a lever or something would drop the block down and out of the action for reloading.
