What are the state laws (if you*could cite the statue that would be great) concerning pepper spray (bear mace in my case)?

No state law against it on most places.
Prisons and jails are still off-limits.
The school law was recently amended to allow for adult students to carry defensive sprays there.

Cities and counties can't make or enforce restrictions on defensive sprays.
The preemption law covers them and other weapons.
    See 16-11-173(f).

Correction: The school zone law, 16 11–127.1, never banned defense of sprays like mace or pepper spray. It did ban tasers and other electric shock devices like stun guns.
A recent bill changed that .

Does it matter what the size of the canister is?

I know Cobb courthouses will not permit anything like mace, pepper spray, stun guns, tasers, etc. Found this instruction for jurors for the state courthouse in Cobb, been in effect for quite awhile.
